Bacillus cereus is an epidemic soil dwelling, gram positive, rod shaped motile, beta haemolytic bacterium. This bacterium is harmful to humans and cause foodborne illness while some of the strains can be beneficial as probiotics for animals. It is the cause of fried rice syndrome as the bacteria are classically contacted from the fried rice dishes that have been sitting at room temperatures for a long time. These are facultative anaerobes and can produce endospores that are protective. The top open access journals are peer reviewed scholarly journals of Journal of rice research.
